Bruch: Violin... he wrote three VCs, a Serenade and Scottish fantasy for the instrument.
Weber: Clarinet... his two delicious concerti are must-haves for even a beginner's collection.
a less obvious one:
Sainte Colombe: Violes Esgales (French Viol)
and how about:
RVW: Bass tuba... the only person to take pity on the instrument and write a little concerto for it!!
I also think the following:
Haydn/ Mozart/ Hummel: Oboe... the golden age of the concerto
likewise:
Haydn/ Hummel/ Hertel/ Stamitz/ L Mozart/ Telemann: Trumpet... the golden age of the concerto

I believe Wagner used a certain instrument quite regularly; kind of a cross between a tuba and a horn. Not sure what it was called, but he used it so deftly that they might as well name it after him....
