probably chamber to be getting started with?
I try to get into symphonic work, but I always come to the sparser soundscapes of limited ensembles and solo works, I think concerti will possibly be my door into larger scale works...

Seán's recommendation would seem like a good start. I have not heard it myself but it has the advantage of being a "one stop shop" so to speak and the Amadeus Quartet are a very good ensemble.
The backbone of my Brahms chamber collection are the following....
With ensembles like the Beaux Arts, the Quartetto Italiano and the Berlin Philharmonic Octect one gets, like the Amadeus Quartet, top quality.

You said that you have the Violin Concerto covered so the concerti recommendations from me are....
I have a number of versions of the piano concertos but that Moravec is the best that I have heard.

Two wonderful chamber works....
I particularly like the Debussy but both are very well played here.
