Maybe he should consider setting aside a space for a vino operator to complement the coffee?

"On sales" could work well there and the premises probably has a licence to sell wine for consumption there anyway. Not my field though... I just sell wine and get people out as quickly as possible (after long conversations about hifi, cars, house renovations, holidays, rugby and the State of the Nation generally.)
